Breakfast Exploration ::: Peanut Butter French Toast (Hong Kong Cafe Style)

I need to declare that every time we head to a Hong Kong Cafe 80% of the time I'll order French Toast and have it as a meal. It will cost $4++. Today is the day I'll start making so hopefully I won't order this any more.


Recipe of 1 Thick French Toast

Ingredients
3 slices of normal Bread
Enough for a generous spread of Peanut Butter
Honey or Maple Syrup
Thick slice of Butter

Egg Mixture Ingredients
1 Egg
2 teaspoons of Sugar
0.25 teaspoon Cinnamon Powder
1 tablespoon of Milk
Few Drops of Vanilla Extract

1. In a small mixing bowl, place all the Egg Mixture Ingredients and whisk briefly then set aside.
2. Make a triple sandwich style Peanut Butter Sandwich. We love to give it a thick spread of Peanut Butter.
3. Heat the non stick pan and melt approx 50g of Butter.
4. Dip the Peanut Butter Sandwich with thein the Egg Mixture.
5. Place in the pan and fry each side until Golden Brown.
6. Serve with Honey or Maple Syrup and a Thick Slice of Butter.

Lemon Poppy Seed / Chai Seed Muffins

Been trying out a few recipes but failed to find the proper Lemon Poppy Seed Muffin texture and taste that I been having back in my university days in Melbourne. After numerous tries, here it is! Finally i found it!

Recipe makes 15 cupcakes


Cake Batter Ingredients
250g Flour
1.5 teaspoon Baking Powder
15g Poppy Seed / Chai Seed
170g Castor Sugar
95g Butter
75ml Vegetable Oil
2 Lemon Zest
3 Eggs
35ml Lemon Juice

Lemon Syrup Ingredients
25g Castor Sugar
35ml Lemon Juice

1. Sift Flour and Baking Powder, follow up stiring in the Poppy Seed / Chai Seed.
2. Beat the Castor Sugar, Butter, Vegetable Oil and Lemon Zest until pale and fluffy.
3. Preheat oven at 160ºC.
4. Add in the eggs one at a time and beat well.
5. Whisk the Lemon Juice into the mixture.
6. Add in the Flour Mixture in and beat it slowly until well combine.
7. Pour the batter into the cupcake liners and bake it for 30mins or use a cake tester stick or wooden stick to check, if it pulls out clear it's done!
8. While the muffins are baking, Heat up the Castor Sugar and Lemon Juice until all the Sugar disolve.
8. When the muffins is done and cool on the tray dredge it with caster sugar before serving, then remove from tray to totally cool.

Just use a butter knife and cut out sqaure but pyramid shape in the centre muffin & spoon in the Blueberries Compote till it fill up the cavity.

Delicious Curry Fish Head at Samy's Curry, Dempsey Hill

Yay: Well cooked, fresh and fragrant fish head curry, served on banana leaf!
Nay: A bit on the Spicy side; Parking is a bitch.

Samy's Curry opened its' doors some 30-ish years ago in Dempsey Hill, serving up a full menu worth of curries, breads, tandoor meats ... and fish head curry. I'm a big fan of Indian-style fish head curry - I like the more robust spice and flavor compared to Chinese-style. And perhaps there's also just that something about free flow rice and vegetables on a banana leaf.

I'm glad to report, then, that the fish head curry in Samy's Curry is very good! The snapper head itself is fresh and well cooked - flesh is moist and succulent. I liked the curry itself as well - had the right balance of tanginess and spice from the curry.

The other dishes we tried were a little hit and miss, though. Tandoori chicken and the Fish Cutlets were par for the course; and the dry-cooked lamb while being chock full of flavor was a little too spicy for our taste buds.

The Masala Chicken also a mixed bag - nice taste on the sauce but the dry parts of the chicken were simply too dry to appreciate and enjoy.

If you're in the mood for a nice, solid fish head curry then Samy's Curry is a no brainer! Do turn up early though - parking in the area can get quite annoying once the crowd starts building up. Dinner with drinks should fall in around $15-$20/pax.

Our precious disney teddies, Chiaki Bear and Natsuko Bear just turn 3 years old on 31 Aug 2014. Baked this cake specially for them and to feed my craving of peanut butter and chocolate.



We love this recipe. It's a keeper.

Peanut Butter Frosting


Ingredients
100g Peanut Butter
50g Butter
1 tablespoons Milk
1 cup of Icing Sugar

1. Place the Peanut Butter, Butter, Milk into the mixing bowl and beat until mixed well.
2. Gradually mix in the Icing Sugar well, it'll thick and will be spreadable.
3. Beat it for extra 3 mins for it to get fluffy.
