Foochew Chinese Red Wine Chicken with Mee Sua (红糟酒面线) Recipe


Serving for 2

Ingredients
2 tablespoons of Sesame Oil
50g of sliced Old Ginger
300g Chicken
500ml of Foochew Red Glutinous Rice Wine 红糟酒
1 tablespoons of Foochew Red Glutinous Rice Wine 红糟酒 Residual (Optional)
500ml of Water
50g of sliced Shiitake Mushrooms
50g of sliced Black Fungus

  1. Heat pan on medium high heat and fry Old Ginger until fragrant.
  2. Place the Chicken and top with Foochew Red Glutinous Rice Wine 红糟酒 Residual.Pan dry until fragrant, then add in Water, Foochew Red Glutinous Rice Wine 红糟酒 and mix well.
  3. Cover & bring it to a boil then simmer for 40mins.
  4. Add in the Shiitake Mushrooms & Black Fungus, continue simmering for 5mins.
  5. Serve hot with Mee Sua.

Dry Foochew Chinese Red Wine Chicken Recipe


Serving for 2

Ingredients
2 tablespoons of Sesame Oil
30g of sliced Old Ginger
300g Chicken
3 tablespoons of Foochew Red Glutinous Rice Wine 红糟酒 Residual
50ml of Water
50g of sliced Shiitake Mushrooms
50g of sliced Black Fungus


  1. Heat pan on medium high heat and fry Old Ginger until fragrant.
  2. Place the Chicken and top with Foochew Red Glutinous Rice Wine 红糟酒 Residual.Pan dry until fragant, then add in Water and mix well.
  3. Cover & let it simmer for 25mins.
  4. Add in the Shiitake Mushrooms & Black Fungus, continue simmering for 5mins.
  5. Serve hot with Rice.

Pasta Exploration ::: Prefect Spaghetti Carbonara Recipe from Scratch

Been a fan of Carbonara, been buying the ready made sauce. However, since I started baking and using Thicken Cream for my bakes, here I am trying out Carbonara from scratch with the extra Thicken Cream I have in my fridge.


Serves 2 pax
Ingredients
1.5cm Angle Hair Spaghetti (x2 to x3)
2 L of Water
1 teaspoon of Salt

200ml Thicken Cream
2 Egg White
2 teaspoons of Garlic Powder
2 tablespoons of Parmesan Cheese
2 teaspoons of Herbs

8 slices of Bacon (cut up into 1cm slices)
50g sliced Mushrooms
1 tablespoon Olive Oil
Salt & Pepper to taste

2 Egg Yolk (Optional - Garnishing/serving for self mix)
chopped / dry Herbs (Garnishing)

Instructions
  1. Cook pasta in a large pan of boiling salted water according to the packet instructions.
  2. Meanwhile, mix the Thicken Cream, Egg White, Garlic Powder, Parmesan Cheese gently with a fork until well combine.
  3. Heat up a pan, cook Bacon stirring for 2-3 minutes.
  4. Add Mushrooms and Olive Oil, stirring until the Bacon beginning to crisp, set pan aside.
  5. Quickly add the Carbonara mixture and Herbs, bring it to a simmer.
  6. Drain pasta, then return to pan, toss to combine. The heat from the pasta will cook the egg slightly and form a creamy sauce.
  7. Serve immediately with extra parmesan, crushed Black Pepper, Herbs and top with an egg yolk.

Okinawa Pork Belly Shiitake Mushroom Rice (Okinawa Butaniku Hara Kinoko Shītake Gohan)


Ingredients
1 cup of Japanese Rice
enough water as advice by your Rice Cooker
80g of thinly sliced shabu-shabu Pork Belly
1 tablespoon of dry Wakame (Seaweed)
1 sliced Shiitake Mushroom
1 teaspoon of Black Sesame
1 tablespoon Sake
1 tablespoon Light Soy Sauce

Step 1 Wash the Japanese Rice and pour enough water as the measurement in your rice cooker.
Step 2 Put in the sliced shabu-shabu Pork Belly, dry Wakame, Shiitake Mushroom, and Black Sesame.
Step 3 Mix all the ingredients up until it is evenly distributed.
Step 4 Turn on your rice cooker to cook.
Step 5 When the rice cooker beeps, leave it for extra 10mins.
Step 6 Loosen the rice and mix them up and dish them in rice bowl or bento box.

Lovely rice that can stand alone.

Chawanmushi with Angry Bird Fishcake, Prawns, and Shiitake Mushroom


Ingredients
2 Chawanmushi Cups
2 Eggs
320ml of Filtered Water / Dashi Stock / Chicken Stock
2 tablespoons Soya Sauce
1 tablespoon Mirim / Chinese Rice Wine
4 pieces of peeled Prawns
4 tablespoons of Filtered Water
2 Angry Bird Fishcake
1/2 sliced Shiitake Mushroom
Water for steaming


Pre-cook peeled Prawns
Step 1 Heat up a pan.
Step 2 Pour the Filtered Water and place the prawns in.
Step 3 Let it Simmer on both side until it turns slightly white.
Step 4 Remove from pan and set aside.


Chawanmushi Egg Mixture Steps
Step 1 Fill a steamer with water and put it to boil. Note that the cups should 2" above the boiling water.
Step 2 Break eggs into a bowl and stir it gently in a cutting motion to avoid bubbles from forming. Stir till well-mixed.
Step 3 Gradually stir the Filtered Water / Dashi Stock / Chicken Stock into the eggs.
Step 4 Add Soya Sauce and Mirim / Chinese Rice Wine and stir till well-mixed.

Assembling and Steaming Steps
Step 1 Arrange the Prawns, Angry Bird Fish Cake & Shiitake Mushroom in the Chawanmushi Cups.
Step 2 Fill the Chawanmushi Cups with 3/4 full of the Chawanmushi Egg Mixture.
Step 3 Place in the steamer and cover the Chawanmushi Cups.
Step 4 Steam on high heat for 2 minutes then off the fire to let the egg set.
Step 5 Continue steaming for anything 5 minutes on low heat then off the fire to let the egg set. This is to prevent over cooking. Repeat one more time or until the top middle is not watery.
Step 6 Remove Chawanmushi cups from the steamer and set aside to cool for 2 minutes before serving.

Tips: Do not beat the mixture. For a smooth beancurd-like texture and no bubbles too, use the cutting motion while you stir gently.

It's ready to be serve!

Stir-Fry Sesame Mayonnaise Enoki Mushroom (Itame Gomamayonēzu Enoki Take)


Ingredients
1 pack of fresh Enoki Mushroom
1 tablespoon of Japanese Mayonnaise
1 tablespoon of White Sesame

Step 1 Discard root of the Enoki Mushroom, rinse it then cut them into halves.
Step 2 Ground the White Sesame using a ponder and set aside.
Step 3 Heat a non-stick pan.
Step 4 Add in Mayonnaise and Enoki Mushroom and cook on medium heat for 10seconds.
Step 5 Turn the heat off then mix in the grounded White Sesame.
Step 6 Transfer onto a serving plate.

It's ready to be serve!

Chawanmushi with Chicken, Ginko Nuts, and Shiitake Mushroom


Ingredients
2 Chawanmushi Cups
2 Eggs
320ml of Filtered Water / Dashi Stock / Chicken Stock
2 tablespoons Soya Sauce
1 tablespoon Mirim / Chinese Rice Wine
6 pieces of cooked diced Chicken
2-3 Ginko Nuts
1/2 sliced Shiitake Mushroom
Water for steaming

Chawanmushi Egg Mixture Steps
Step 1 Fill a steamer with water and put it to boil. Note that the cups should 2" above the boiling water.
Step 2 Break eggs into a bowl and stir it gently in a cutting motion to avoid bubbles from forming. Stir till well-mixed.
Step 3 Gradually stir the Filtered Water / Dashi Stock / Chicken Stock into the eggs.
Step 4 Add Soya Sauce and Mirim / Chinese Rice Wine and stir till well-mixed.

Baked Halibut Fish on top of Broccoli and Shiitake Mushroom


A friend of mine in office, keep insisted me to try this recipe of hers. She promoted to me as easy to prepare less hassle, ,very delicious and healthy. After a long while of our fridge to clear off our cooking supply, we got hold of a Halibut Fish Fillet and here is the recipe of our wonderfully healthy dinner.

Sauce Ingredients
1 whole peel Garlic
4 tablespoons of Olive Oil
1 teaspoon of Dry Italian Herbs
Dash of Salt

Step 1 Peel and pound up the Garlic.
Step 2 Add in the Olive Oil, Dry Italian Herbs and Salt and be gentle and slowly pound it.
Step 3 Set aside to be used later.


Ingredients
1 Halibut Fish Fillet
1 whole cut up blenched Broccoli (you can add traffic light Capsicum to make it more colorful)
8 Shiitake Mushrooms
1 thick slice of Butter
1/2 Lemon for serving (optional)

Step 1 Put a pot of water to boil and place in the cut up the Broccoli for blenching. Meanwhile quarter the Shiitake Mushrooms.
Step 2 Pre-heat the oven to 180°C. Arrange the Shiitake Mushroom in the baking pan.
Step 3 When the Broccoli turns bright green arrange them in the pan like the Shiitake Mushrooms.
Step 4 Place the Halibut Fish Fillet on top.
Step 5 Spread the Sauce mixed prepared earlier over the whole fish and if there is extra pour it on the Broccoli & Shiitake Mushrooms.
Step 6 Lastly, a few slices of butter over the fish.
Step 7 Bake for about 25 to 30mins. Serve immediately with a few Lemon Wedges.

Korean Exploration ::: Home KimChi Soup / 홈메이드 김치 국물 - Version 1

Something I have plan to make for dear on Sunday however, his business trip is postponed.

Here I am sharing it 1st..

Homemade KimChi Soup / 홈메이드 김치 국물

I've made the Kimchi myself, too! But, can't edit the pictures to upload for blogging! Will update the Homemade Kimchi recipe soon~

serving for 3-4 persons

(A)
120g Pork Belly sliced thinly sliced
60g Pork Lion Shoulder thinly sliced
1.5 tablespoons of Cooking Wine
Homemade KimChi Soup / 홈메이드 김치 국물

(B)
1/2 Onion Sliced
4 Fresh Emperor Shiitake Mushroom thinly sliced
Diced half of the Silken Tofu sliced into cubes

Homemade KimChi Soup / 홈메이드 김치 국물

(C)
2 tablespoons of Vegetable Cooking Oil
3 Cloves of Garlic Diced
2 small bowls of Kim Chin with a bit of Kimchi Juice

(D)
3 small bowls of water
1/4 cube of Chicken Stock
OR
3 teaspoon of white miso paste
Homemade KimChi Soup / 홈메이드 김치 국물

Top with:::
2 Spring Onions Sliced


Step 1: Marinate (A) for 15Mins in a pot.
Step 2: Prepare the list in (B),(C),(D),Topping while (A) is Marinating.
Step 3: Now to Stir fry (C). Heat pan - pour in the Vegetable Cooking Oil - put in the garlic still lightly browned - put in the kimchi and stir fry for 2-3mins.
Step 4: Let's start arranging. Using the same pot that has (A) - place the stir fried (C) on top - place the (B) all in each corner.

Step 5: Pour (D) in slowly then take it to a boil and simmer for 10mins.

Step 6: Dish it in individual bowls or a bowl for all to share and sprinkle the Sliced Spring Onions on top & serve.

It'll be superbly better if we can use Korean clay pot and cook in it and possibly in individual clay pot for each person.
