Breakfast Exploration ::: Peanut Butter French Toast (Hong Kong Cafe Style)

I need to declare that every time we head to a Hong Kong Cafe 80% of the time I'll order French Toast and have it as a meal. It will cost $4++. Today is the day I'll start making so hopefully I won't order this any more.


Recipe of 1 Thick French Toast

Ingredients
3 slices of normal Bread
Enough for a generous spread of Peanut Butter
Honey or Maple Syrup
Thick slice of Butter

Egg Mixture Ingredients
1 Egg
2 teaspoons of Sugar
0.25 teaspoon Cinnamon Powder
1 tablespoon of Milk
Few Drops of Vanilla Extract

1. In a small mixing bowl, place all the Egg Mixture Ingredients and whisk briefly then set aside.
2. Make a triple sandwich style Peanut Butter Sandwich. We love to give it a thick spread of Peanut Butter.
3. Heat the non stick pan and melt approx 50g of Butter.
4. Dip the Peanut Butter Sandwich with thein the Egg Mixture.
5. Place in the pan and fry each side until Golden Brown.
6. Serve with Honey or Maple Syrup and a Thick Slice of Butter.

Pasta Exploration ::: Tuna Aglio Olio


First Aglio Olio served to the picky Aglio Olio eater the deary. His comments over this dish is it only lack of fresh chili slices for the spicy kick.

Ingredients
1 can of Tuna in Water
3 tablespoons Extra Virgin Olive Oil
4 cloves of sliced/crushed Garlic
1/4 teaspoon Cayenne Pepper
1 sliced Chilli Padi
Sprinkle of Italian Herbs
1.5cm Angle Hair Spaghetti (x2 to x3)
2 L of Water
1 teaspoon of Salt

Step by Step
Step 1 Pour Water to boil over the stove with 1 teaspoon of Salt. If the water is boiling place in the pasta. (Cooking the pasta together with the Aglio Olio sauce.)
Step 2 Heat up a pan and add in the Extra Virgin Olive Oil, sliced/crushed Garlic and Cayenne Pepper. Stir fry until garlic is cooked.
Step 3 Toss in the cooked Angle Hair Spaghetti and a dash of salt to taste. Dish on a plate.
Step 4 Turn up the heat and pour the can of Tuna in Water in the same spaghetti pan. Simmer until all the water has evaporated.
Step 5 Dish on top of the Aglio Olio. Crush on some Black Pepper and sprinkle some Italian Herbs before serving.

Pasta Exploration ::: Black Pepper Roast Chicken Aglio Olio


Convenience of preparing a meal is now a very essential need. Roasting chicken is easy but takes time & effort and impossible to cook it on a weekday for working couples/parents. I bought a whole Black Pepper Roast Chicken from a supermarket split it up into 2 meals and this is one of the meal that have been prepared. On your weekend you can also Roast your Chicken and split it up into meals.

Ingredients
1 quarter Black Pepper Roasted Chicken
2 tablespoon Extra Virgin Olive Oil
1 clove of crushed Garlic
1/2 teaspoon Cayenne Pepper
Sprinkle of Italian Herbs
1.5cm Angle Hair Speghetti (for 1)
2 litre of Water
1 teaspoon of Salt

Step by Step
Step 1 Place the chicken in a 160°C oven to warm it up.
Step 2 Pour 2 litre of Water to boil over the stove with 1 teaspoon of Salt. If the water is boiled place in the pasta. (Cooking the pasta together with the Aglio Olio sauce.)
Step 3 Heat up a pan and add in the Extra Virgin Olive Oil, crushed Garlic and Cayenne Pepper. Stir fry until garlic is cooked.
Step 3 Toss in the cooked Angle Hair Speghetti and a dash of salt to taste.
Step 4 Dish on a plate. Crush on some Black Pepper and sprinkle some Italian Herbs before serving.

Pasta Exploration ::: Bacon Aglio Olio


Ingredients
2 sliced Streaky Bacon
1 tablespoon Extra Virgin Olive Oil
1 clove of crushed Garlic
1/2 Cayenne Pepper
Sprinkle of Italian Herbs
1.5cm Angle Hair Speghetti (for 1)
2 litre of Water
1 teaspoon of Salt

Step by Step

Step 1 Pour 2 Litre of Water to boil over the stove with 1 teaspoon of Salt. If the water is boiled place in the pasta. (Cooking the pasta together with the Aglio Olio sauce.)

Step 2 Place the bacon in a non stick pan and cook it until it is lightly browned. (The bacon will turn out semi crispy after step 3 so don't worry.)

Step 3 Add in the Extra Virgin Olive Oil, crushed Garlic and Cayenne Pepper. Stir fry until garlic is cooked.

Step 3 Toss in the cooked Angle Hair Speghetti and a dash of salt to taste.

Step 4 Dish on a plate. Crush on some Black Pepper and sprinkle some Italian Herbs before serving.

Breakfast Exploration ::: Pancakes lover! - Home-made Butter Milk Pancake Batter

Our 2012 journey begins, wish everyone all the best!

Starting this year post with home-made butter milk pancakes. Yea! Not from the box. Not pre-mixed. Something that you can make at home instead of going to Paddington's pancake house and pay for these fluffy pancakes.

Butter Milk Pancakes
What you need:

375ml Dairy Farmers Buttermilk (Package as below picture)

Butter Milk Pancakes
1 1/2 cups of Flour
2 teaspoons of Baking Powder
2 tablespoon of Castor Sugar
1 Egg
1 tablespoon Melted Butter

Sift the Flour & Baking Powder into a deep plate/bowl. Take a whisk and make a whole in the middle of the flour. Just like the picture below.

Put the Melted Butter, Castor Sugar in the hole.

Then add the egg in too.

Slowly whisk from inside out, this will ensure no pocket of flours will appear after you finish.

Continue until the mixture is combine. Then add in the butter milk in part by part and continue mixing till you get the normal consistency batter, that is partially thick.

Leave the batter for 15mins.

Heat your non-stick pan and wipe some butter on the surface of the pan. Choose a lid to scoop the amount of batter to make your desire pancake size. When the top starts bubbling, let it stay a while more till the sides starts drying up a little. Then it's time to flip it over! Both sides should be golden brown.

Serve with Maple syrup. However, Honey will do too for healthier reasons.

**You can make this batter a day before and keep in in the fridge. Or cook your pancakes immediately to consume & serve.**

Sandwiches Exploration ::: Cheddar Cheese Toast

Yums……………this is for those who are crazy over CHEESE!!!!!!!!! Like me…!?!?

*Cheddar Cheese Toast 1

All you need is
2 slice of White Toast to make each sandwich
Cheddar “flakes”.
Butter

Step 1: Heat Non-stick Pan to Low heat.
Step 2: Melt Butter.
Step 3: Toast in 2 slice of white bread for 30seconds to heat the bread.
Step 4: Turn 1 around only and generously put the Cheddar “flakes” in the middle and spread them around slightly so you can bite cheddar in every bites of this toast.
Step 5: Place the other toasted side of the other slice of white bread on top of the Cheddar “flakes”. This is so the heat will melt the Cheese…. Yumss…. Almost there!
Step 6: Melt a little more butter on the empty side of the pan, then flip to toast the untoasted side. Sprinkle some cheddar on top, for the crisps. Turn it over and continue letting it toast for 1min. Sprinkle some Cheddar flakes while waiting.
Step 7: Flip over and toast for another 1min.
Step 8: Sliced the sandwich in triangle half shape & serve hot.

I particularly love this sandwich… will share more of the crazy cheese toast and other sandwiches I made when I was a kid with all of you some day.
