Pho Vietnamese Beef Rice Noodle Soup Recipe

Our very first Vietnamese recipe!

Prettier picture to share as we made this again on 30 Mar 2017! Give this recipe a try. We believe you'll love it too.

Pho Beef Noodles is what will come to our mind when we think of Vietnamese food. The richness of the beef broth but yet light enough to enjoy every slurp. The soft tender beef. It's one of the food you will think of when it's a cold rainy day.


Broth Ingredients
700g Oxtail
1.5" Ginger
1 Yellow Onion
50ml Fish Sauce
4 whole Star Anise
3 whole Cloves
2" Cinnamon Stick
0.5 teaspoon Fennel Seeds
2 Bay Leaves
3 litre of Beef Stock
Salt & Pepper to taste
3 Soup Stock Bags


Step 1 Place the oxtail in a large pot and add enough water to cover and let it boil for 10mins.
Step 2 Remove the oxtail and set aside while you pour away the water, rinse the pot.
Step 3 Slice the Yellow Onion and Ginger in half and place it on a aluminium foil and char them under the broiler until lightly browned.
Step 4 Using the same pot place the oxtail in along with the Beef Stock and bring it to a boil.
Step 5 Meanwhile, toast the Star Anise, Cloves, Cinnamon Stick in a small pan over a stove on medium heat. Turn the spices a couple of times, they are ready when you can smell. the aroma and it is slightly darken. This will take approximately 3 to 4 minutes.
Step 6 Pack up all the spices, charred Ginger and Onions in the Soup Stock Bags for easy retrieval.
Step 7 When you're done with Step 5 and 6, the broth would have just started boiling. Place in the packed Spice Bags and let the broth simmer for 4 hours.
Step 8 After 4 hours, discard all the packed spice Bags. Remove the oxtail from the pot and pull the meat from the bones.
Step 9 Return the bones to the broth and continue simmering uncovered for about an hour.
Step 10 Add salt and pepper to taste.


Serving Ingredients
2 serving of Rice Noodles
1 cup of Mung Bean Sprouts
1 bunch of Scallions
1 hand full of Fresh Cilantro
1 hand full of Parsley
1 hand full of Basil
3 Limes
Chilli Paste
Thinly sliced Filet Mignon/ Brisket/ Flank or Beef Balls

Step 11 Soak the Rice Noodles in cold water for 20minutes.
Step 12 Arrange the sliced scallions, cilantro, parsley, basil, bean sprouts, lime wedges on a platter in separate piles.
Step 13 Bring a large pot of water to a boil and add the drained rice noodles. Give the noodles a quick stir and cook for about a minute until tender but firm.
Step 14 Just before serving, return the broth to a full boil.
Step 15 Divide the Rice Noodles, arrange the Beef and Mung Bean Sprouts on top of the Rice Noodles.
Step 16 Carefully ladle the boiling broth over the raw beef or beef and Mung Bean Sprouts.
Step 17 Garnish with Scallions and serve immediately. Or serve the bowl of noodles immediately along with the platter of garnish.

Cooked these meal for deary and me only. The oxtail meat was sufficient portion for us, so we didn't add extra beef or beef balls. Also, as you notice from the picture we omitted Cilantro, Parsley, Basil as we don't fancy these herbs. This is the beauty of home cook food.

Cooking Exploration ::: Longevity Noodles 长寿面 (Chang Shou Mian) - Minced Pork with HK Style Noodles

Some traditions should be kept, some probably can be ignored. I choose to keep this as I see there is a meaningful purpose to have this still running in the family line. Many families have given up this tradition and followed the western style just blow a candle, have a cake, and sing a birthday song. Some still keep to have 2 hard boiled eggs will do. I love to start every lucky love ones birthday with 2 hard Boiled Eggs and Noodles.

Why suddenly I am blogging about this? It's because it's deary birthday today!

Let's get back to topic!

My grandparents and my parents used to tell me that birthday boy/girl must have noodles as a blessing to have Long Life, Good Luck, Prosperity, Happiness and Abundance. I know it sound superstitious, but it's a good wishes so why not let's follow? Also, it reminds me of my ancestors teaching. Even in Chinese restaurants they serve this noodles too! Probably different restaurants serve different types depending on their chef style. This is one of mine style. The one i cooked for dear when we was in Mauritius, too bad there is no pictures of it if not i would have shared the recipe here.

First, you need to prepare this early to flavor the minced pork.

200g of Minced Pork

Minced Pork Marinate:
1 teaspoon of Sugar
1 teaspoon of Cornflour
1 teaspoon of Sesame Oil
Dash of White Pepper


Mixed well and let it sit to marinate for at least 30minutes!

1 tablespoon of Cooking Oil
2 diced Shallots
3 cloves of Garlic
2 tablespoons of Xiao Xing Chinese Wine
Dash of Soy Sauce


Heat the pan along with the cooking oil and put in the Shallots and stir fry till it's semi-transparent, immediately add in the Garlic and continue to saute till the garlic is slightly browned. Place the Marinated Minced Pork in and use the spatula to chunk it up. Add in the Xiao Xing Chinese Wine and Soy Sauce, and continue to saute till the pork are all cooked. Dish in a small plate and set aside for later use.

Using back the same pan. Heat up the Noodles Mixture.

Noodle Mixture:
1.5 tablespoons of Shallot Oil
1 tablespoon of Pork Lard
1.5 tablespoons of Light Soy Sauce
1.5 tablespoons of Oyster Sauce


When done pour it in the bowl. The reason i would like to separately measure this later is to ensure that the noodles are not overly seasoned.

Leave the empty pot there to toss the noodles later, so there will be less things to wash at the end of the day.

3 rolls of HK Style Fresh Egg Noodles

Fill a pot small enough to stand your sift (so you won't need to hold it) with water 3/4 full. Keep a big tub of cold water beside this pot.

Take the water to a boil. Place the loosen noodles in the sift and let it cook till the noodles seems averagely cook. Remember you have to use your chopsticks to on off loosen up the noodles so it will cook evenly. When 1min is done, remove the sift from the boiling water and shake it off. Dunk it in the cold or room temperature water and loosen it to cool all down, then again! put it back in the boiling water for a while more to warm the noodles up. Drain it and put in the other pan. Continue with the next bunch of loosen noodles till you're done.

I like to do it one by one for this step as I was taught from my previous restaurant "master chef" of wan tan mee, how to handle this correctly. He made me eat all my noodles and he tries it too. Guess how many bowls I need to make till he was satisfied with my handling of noodles? (answer will be right below of this post.)

Here are some pointers:
**different type of noodles takes different timing to cook.
**don't be afraid to test out and throw one away when it's over cook.
**learn how to see with your naked eyes when your noodles are ready. (this is hard)

2 tablespoons of chopped Spring Onion
3 sliced Cherry Tomatoes for refreshing bites


After all your noodles are in the pot, measure the Noodle Mixture by tablespoons. 2 tablespoons of it for 1 roll of noodles used. Toss it to mix well then add in the Minced Pork, Spring Onions, Cherry Tomatoes and toss again.

Then dish to serve!

You might notice there are 2 hard boiled eggs served along with the Longevity Noodles. This is another Chinese good wishes for the birthday boy/girl. However, I do not remember what meaning it actually brings. Please do tell me if you know.

I only was able to succeed after making 10 bowls that I have to eat myself for my meals. =.=

Noodles Exploration ::: Dry Tossed Wan Ton Mee with Shredded Chicken 鸡丝乾撈雲吞麵

I remember way back a few post ago, while sharing my other recipe of Chicken Filled Dumplings... I promised that I would share this recipe! I mean long long ago approx 1 month ago... **sorry**

Chicken Wan Ton Mee

Ingredients:::
Blenched Baby Bok Choy 小白菜
Shredded Chicken
1 ball Hong Kong Egg Noodles
3 bowls of Filtered Water

Mix this up as Sauce for the Wan Ton Mee!
1.5 tablespoon of Shallot Oil
1.5 tablespoon of Chicken Oil or Pork Oil
1.5 tablespoon of Light Soy Sauce
1.5 tablespoon of Caramel Sauce
1 tablespoon of Oyster Sauce
1 teasoiin of Castor Sugar
dash of White Pepper

Bring the filter water to a boil & cook the egg noodles in a pot for 15secs. Here is the tricky part, where I learnt from my chef sifu back in my Melbourne waitress days. The noodles cannot be over cooked, 10-15secs depending on your egg noodles. Immediately after that rinse in a post of cold water to have the egg noodles left springy. It's not done yet! Put it back in the boiling water again for another 10-15secs.

Drain and mix well with the Wan Ton Mee Sauce as above! Toss it till it's even out. Dish it on a plate, place the blenched Baby Bak Choy then Shredded Chicken. Sprinkle some Spring Onion to make it look pretty & serve

This is one person's serving, multiply if you're doing for more!

Noodles Exploration ::: Similar to Cafe Style Ham & Egg Instant Noodle Set!! *Slurps*

Instant Noodles Cafe Style

This is something dear and his sisters love to order whenever they go to HK Cafe, Old Town White Coffee, etc etc... when ever there is instant noodles on the menu...

Here I did this for our dinner one day & we love it! :)

1 pack of Maggie Brand Chicken Flavor
1 bowl of Water
2 Slice of Ham
1 Fried Egg
Baby Bak Choy
Pan Fried White Sesame
Chopped Spring Onion

How I cooked this! Probably you have your own style it will all turn out the same.

Multi-tasking me... I boiled Water, Fry Ham, Wash Baby Bak Choy & Spring Onion then chop Spring Onion. After Ham is cooked Fry Egg, when water boil put the Chicken Seasoning in then put Baby Bak Choy to blench! Take out and put in bowl. Place the noodles in to cook~

When Noodles are cook scoop them up in the bowl, arrange your eggs, Baby Bak Choy, Ham nicely on top. Pour soup over sprinkle some White Sesame and Spring Onion.

DONE~!!! Serve when HOT...
