Pasta Exploration ::: Prefect Spaghetti Carbonara Recipe from Scratch

Been a fan of Carbonara, been buying the ready made sauce. However, since I started baking and using Thicken Cream for my bakes, here I am trying out Carbonara from scratch with the extra Thicken Cream I have in my fridge.


Serves 2 pax
Ingredients
1.5cm Angle Hair Spaghetti (x2 to x3)
2 L of Water
1 teaspoon of Salt

200ml Thicken Cream
2 Egg White
2 teaspoons of Garlic Powder
2 tablespoons of Parmesan Cheese
2 teaspoons of Herbs

8 slices of Bacon (cut up into 1cm slices)
50g sliced Mushrooms
1 tablespoon Olive Oil
Salt & Pepper to taste

2 Egg Yolk (Optional - Garnishing/serving for self mix)
chopped / dry Herbs (Garnishing)

Instructions
  1. Cook pasta in a large pan of boiling salted water according to the packet instructions.
  2. Meanwhile, mix the Thicken Cream, Egg White, Garlic Powder, Parmesan Cheese gently with a fork until well combine.
  3. Heat up a pan, cook Bacon stirring for 2-3 minutes.
  4. Add Mushrooms and Olive Oil, stirring until the Bacon beginning to crisp, set pan aside.
  5. Quickly add the Carbonara mixture and Herbs, bring it to a simmer.
  6. Drain pasta, then return to pan, toss to combine. The heat from the pasta will cook the egg slightly and form a creamy sauce.
  7. Serve immediately with extra parmesan, crushed Black Pepper, Herbs and top with an egg yolk.

Baked Bacon Ham Spinash Cream Sauce Rice! Ongoing extra added Mix and Match Ideas

Always think this very tedious to make this but it's one of the simple and fast! Anyone can get it done in 20mins or 30mins.


Ingredients
2 bowls of Rice in Baking Bowls
4 pieces of Bacon Strips
6 pieces of Ham
3 handful of Spinach leaves
230g / approx half a bottle of Leggo's Alfredo Creamy Pasta Sauce
100ml Water
80g Grated Mozzrella Cheese



Preheat over at 190°C.

Heat pan and stir fry the bacon until it is half cooked. Then add in the Ham and stir fry until semi cook. Pour in the Alfredo Sauce and Water, combine well and bring it to a boil. Turn off the fire mix in the Spinach and divide it equally on top of the rice bowls prepared.


Top generously with grated Mozzrella Cheese and put in the oven to bake for 10mins.............


....... or until the top is slightly browned.

Do warn your family members to BECAREFUL the bowls are extremely hot!

Lesson Learnt: Reason why we turn off the fire and mix in the spinach only without cooking over the fire is to avoid the spinach from overcooking and turning in to dirty green dead color.

Fully Baked Potatoes with Bacon


Ingredients
4 Washed Potatoes (Chunky) or 2 US Russle Potatoes (Soft & Sandy)
5 Streaky Bacon
1 tablespoon of Light Sour Cream
Conola Oil Spray

1. Pre-heat oven to 220°C.
2. Prepare your potatoes, by slicing the potatoes deep enough to place the bacon inside.
3. Cut up the bacon according to the length of your potatoes cut size.
4. Stuff in the bacon for every cut you done.
5. Spray Canola Oil on the baking pan, place in the potatoes, and spray some on top again before putting it into the oven for about an hour.
6. Bake until the potatoes is baked by checking using a cake tester/ stick/ knife. If it can be easily poke in & out the potato is fully cooked.

Pasta Exploration ::: Bacon Aglio Olio


Ingredients
2 sliced Streaky Bacon
1 tablespoon Extra Virgin Olive Oil
1 clove of crushed Garlic
1/2 Cayenne Pepper
Sprinkle of Italian Herbs
1.5cm Angle Hair Speghetti (for 1)
2 litre of Water
1 teaspoon of Salt

Step by Step

Step 1 Pour 2 Litre of Water to boil over the stove with 1 teaspoon of Salt. If the water is boiled place in the pasta. (Cooking the pasta together with the Aglio Olio sauce.)

Step 2 Place the bacon in a non stick pan and cook it until it is lightly browned. (The bacon will turn out semi crispy after step 3 so don't worry.)

Step 3 Add in the Extra Virgin Olive Oil, crushed Garlic and Cayenne Pepper. Stir fry until garlic is cooked.

Step 3 Toss in the cooked Angle Hair Speghetti and a dash of salt to taste.

Step 4 Dish on a plate. Crush on some Black Pepper and sprinkle some Italian Herbs before serving.

Breakfast Cup Exploration ::: White Bread + Streaky Bacon + Egg

Been seeing people posting pictures and it looks simple and easy to make for a breakfast. Here is it!


Ingrediants needed:::
1 Baking Porcelain Cup or Silicon Cup
1 Slice White Bread (use 2 if your cup is big)
2 Streaky Bacon
1 Egg

Step 1
Push and fit the bread inside the Cup as you can see in the picture below.

Step 2
Place the Streaky Bacon.

Step 3
Crack the Egg. I crack it separately and fill up the bread cup as much egg white as possible so it won't overflow.

Step 4
Bake in the oven at 150ºC for 15mins. If you like your egg semi solid leave it in the oven for another 3mins.

I pop-ed the breakfast cup up to so it's easier to eat.

Sandwiches Exploration IV ::: Bacon, Grilled Ham, Hash Browns, Egg, Salad Sandwich

Been a while since I stack up my own sandwich! Here is another magical combination for a sandwich. This time around I've stack up my sandwich @ the hotel breakfast buffet.

Bacon, Grilled Ham, Hash Browns, Egg, Salad Sandwich-1

All you need :::
2 sliced of lightly toasted White Bread
3 pieces of Bacon
3 half Grilled Ham
1 Sunny Side-Up Egg
1 Hash Brown
Some mixed Salad Vegetable top with a little White Salad Sauce

First, visit the toast session grab & lightly toast my White Bread, then head around and stack. However, you may notice that actually my Hash Brown, Salad, Top White Bread is set aside. There is a reason!

I in love with SCS Salted Butter, stack up the Hash Browns, Place the Salad.... then on the top bread i actually spread it with 1mm thick of butter...yummsss~!!!!!!!

It's seriously heavenly to start off the day.

This it how it looks when you slice it up in half! See the Sunny Side Up Yolk leaking out when the sandwich is dragged apart... ^^

Side Dish Exploration ::: Mash Potatoes with Bacon bits

Being mash potatoes lovers wherever we go ''mash potatoes as side please~''

On 28 Nov 2010, after our relaxation afternoon at Belle Mare beach in Mauritius, being unable to decide where to head to for dinner, we went home to make made Baked BBQ Honey Chicken Wings, & Garlic Bread to go with instant mushroom soup. Not forgetting our carbohydrates, we made mash potatoes with bacon bits!

Ingredients:::
200g washed potatoes
1/4 tablespoon Salt
10g butter
35g hot milk
Salt to taste
A dash of pepper
Bacon bits

  1. Put potatoes in a pot with enough water to cover them. Add 1/4 tablespoon salt. Bring to a boil, and simmer until potatoes are tender. Test by poking it with a fork.
  2. Drain the potatoes and put aside to cool for a bit before peeling the potatoes.
  3. Place all the peeled potatoes in a flat pan. Add butter, hot milk and mash the potatoes over low heat until a smooth texture is achieved. Then add salt and pepper to taste.
  4. Dish out and serve with bacon bits.

The Reason we actually used bacon bits to make our mash potato dish special is because we both are crazy about Bacon!!! :)
