Condensed Milk Bread Recipe (includes steps & different varieties ideas)


The pretty dreamy look of this bread that have been popular for a while among bakers catches my eyes, but was holding back due to my mooncake exploration planning which the blog post is in progress!

Coming back to this recipe, I prefer this bread over the other 1st bread recipe Xtreme Express Bread / Buns / Rolls Recipe. WHY? This is way more soft, fluffier, and doesn't have the strong yeast smell/taste.


It's so pretty that you wouldn't believe this recipe only takes approx 110mins or 130mins! Best part you very little time working on it most of the time waiting for the dough to proof.

Bread Dough
200g Bread Flour
15g Condense Milk
120g Fresh Milk
20g Castor Sugar
3g Yeast
3g Salt
20g Unsalted Butter (room temp)

Place all ingredients for bread into a mixing bowl use a dough hook to knead for 10 mins or until dough is shinny.

Remove and shape into a ball. Grease the mixing bowl, place the ball of dough and cover it with Clingwrap and let it proof for 30 mins or double in size.


While waiting let's prepare the other ingredients~

Condense Milk Glaze
20g Condense Milk
20g Unsalted Butter (room temp)

Mix Condense Milk glaze ingredients until smooth.


Final Egg Wash
1 Egg
1 teaspoon Vege Oil

Beat Egg with Vege Oil and strain through a sift before use. You can use any glaze that you have left over from other bakes.

Next, prepare a greased bundt pan or a chiffon tin.

After all these you still have time to play with your phone or laptop.

When 30mins is up, punch down the gas and roll the dough into a rectangle.


Glaze the dough generously with the Condense Milk Glaze. Don't move the rolled dough yet! Cut them in cubes like how you cut pizza by using pizza cutter / baking spread tool / knife / anything that would do the job.

Artistically arrange the dough cubes around the inner ring and building upwards of the greased bundt pan.


Cover it with Clingwrap and let it proof for 40 mins.

5mins before the second proof is completed. Preheat overn to 170ºC.

When 30mins is up, brush egg wash onto the bread and sprinkle your toppings.


Bake for 25mins. Remove from oven and dust it with icing Sugar. When it is totally cool you may wanna dust it again with icing sugar, as the previous one would have melted.

Below is my creations: All here to share! Will update more soon as i get inspired. Below are the experimented best approx weight of other required ingredients to give this recipe a twist. You may add as much as you & your love ones like!

Cranberries & Almond Condense Milk Bread
For Topping
50g Cranberries
70g sliced Raw Almonds

Part of the topping can be used as filling sprinkles to be added on after glazing the dough generously with the Condense Milk Glaze.


Dark Chocolate Crumble Condense Milk Bread
For Topping
40g All Purpose Flour
4g Unsweeten Cocoa Powder
35g Brown Sugar
25g Butter (room temp)
50g Dark Chocolate Droplets

Mix All Purpose Flour, Unsweeten Cocoa Powder, Brown Sugar, Butter until well combine. It'll look like Crumbs, stir in Dark Chocolate Droplets and set aside to use after glazing the second proof.

Part of the topping can be used as filling sprinkles to be added on after glazing the dough generously with the Condense Milk Glaze. However, sprinkle only the cumble without Dark Chocolate Droplets. Also, be caution not to sprinkle too generously as it will break the structure apart.

Xtreme Express Bread / Buns / Rolls Recipe (includes steps & different varieties ideas)

This recipe catch my eyes! It's definately the best bread recipe ever if you're baking bread for the 1st time. Be it if you want your family to have fresh bread daily, if you want to last minute bake some breakfast to bring to office to share.

It's just too stunning and unbelievable that this recipe only takes approx 50mins or 70mins depending on how fast and experience you are... Definately the fastest bread recipe in my bread recipe list that I'm yet to explore!


Yeast Activation Ingredients
50g Fine Sugar
250ml Warm Water or Warm Milk
90ml Olive Oil
2 tablespoons of Dry Yeast or Instant Yeast

In a mixer bowl combine Sugar, Warm Water/Warm Milk, Olive Oil, Dry Yeast/Instant Yeast. Give it a mix and allow it to rest for 15mins and it'll be ready for use.


Rest of the Ingredients
1.5 teaspoon of Fine Salt or Sea Salt
1 Egg
480g Bread Flour or All-Purpose Flour

Preheat overn to 190ºC. Add all the rest of the ingredients in to the Yeast Mixture. Use your mixer dough hook to knead until incorporated or use hand to knead in your mixing bowl.

The dough will be a little sticky at touch but it should not stick on your hand. Scoop out the dough on a flat surface. Slightly Roll out the dough and cut it into approx size required.

Time to design!!! This is a good base bread to bake a loaf, bake buns, bake rolls... It's up to your imagination! Below is my few creations, will be adding more as i continue to create with joy & with curiosity...

After having fun shaping and designing your buns/roll. Cover it with a damp clothe and let it proof for 10mins only. It will kind of double in size (I didn't measure..haha).

Glaze the whole expose area with Egg wash or Melted Butter. Place it in the oven to bake for approx 25mins or until golden brown.

Remove from oven and cool in the tray for 10 to 15 minutes when it's totally cool it can be stored in a air-tight container for breakfast the next day!


Lesson Learnt:
1. Replacement of Warm Milk will give the bread a more milky taste which we love.
2. Bread Flour has 14% to 16 % Protien Content, however, All-Purpose Flour has 10% to 12% Protien Content. To have softer bread All-Purpose Flour is the best. If you want a healtier version, replace half of the flour with Wholemeal Flour.
3. If it is sticky add a little more olive oil and flour.
4. Dust your hands with Flour or oil your hand to avoid the dough from sticking when you're designing your buns.
5. A good size bun will need approximately 78g which is 1/14 dough of this recipe.
6. Do not put the buns too close as it will continue to grow during the baking process.
7. IMPORTANT for small families: Immediately after cut up the dough in to the portions, wrap it in kitchen wrap and store it the following 2 possible ways.
- Storage in the freezer and use within 3months.
- Storage in the fridge is best used within 3days but every 12hours check out the dough and give it a light press to slow down the proofing process.
Do not bake frozen/refridgerated bread dough right out of the fridge/freezer. Allow it to thaw and warm to room temperature first for the best results and to ensure that it will rise properly when baked.

Below is my creations: Good and bad ideas of mine. All here to share! Will update more soon and hopefully add on the step by step guide photos.

Rose Ham Bun : In this picture i'm pretty generous with the Ham. Used 2 round Ham sliced in half. Roll the dough into a worm and line the Hams overlapping each another. Once done, roll up the bread like a snail and place the flat side on the bread paper prepared.
Used 78g which is 1/14 dough of this recipe.

Raisins Invasion Bun : Knead in half a tablespoon of Raisins and shape it nicely before placing it in on the bread paper to proof.
Used 78g which is 1/14 dough of this recipe.

Normal Slice Cheese Bun : Bad choice I would say! Please avoid using normal slice cheese.

Luncheon Meat Bun : Pre-fry the Luncheon Meat and set aside to cool. Flatten the dough to a long rectangular shape, place the Luncheon Meat in the middle and fold it. Place on the bread paper folded side down to proof.

Spicy/Non Spicy Floss Bun : Shape the bun and place on the bread paper to proof. After the bun is cool, spread mayonnaise over the whole top of the bun. Generously press on the Floss and you're done!

Hidden Butter Sugar Bun : Roll the dough out to a round flat shape. Place a 1.5cm cube of butter in the middle and half a teaspoon of sugar. Wrap it up neatly and place on the bread paper to proof.

Tasty Butterscotch Croutons for any soup topping

The reason why our Croutons post is Butterscotch. Is because we love Butterscotch Croutons because it gives a sweet flavor, you can use Plain slice bread, Raisin sliced bread, etc of your liking. Hope this little tip works well in your kitchen.


Ingredient
2 slices of Butterscotch Bread

Pre-heat the oven to 140°C.

Diced up the croutons and scatter it into a baking pan.

Let it bake until it turns golden brown.

Dish it into a small bowl for your family or guest to pour into their soup. The longest we stored in a air-tight container is less then 1 week. Of coz freshly baked up is always the best!

Breakfast Cup Exploration ::: White Bread + Streaky Bacon + Egg

Been seeing people posting pictures and it looks simple and easy to make for a breakfast. Here is it!


Ingrediants needed:::
1 Baking Porcelain Cup or Silicon Cup
1 Slice White Bread (use 2 if your cup is big)
2 Streaky Bacon
1 Egg

Step 1
Push and fit the bread inside the Cup as you can see in the picture below.

Step 2
Place the Streaky Bacon.

Step 3
Crack the Egg. I crack it separately and fill up the bread cup as much egg white as possible so it won't overflow.

Step 4
Bake in the oven at 150ºC for 15mins. If you like your egg semi solid leave it in the oven for another 3mins.

I pop-ed the breakfast cup up to so it's easier to eat.

Jokes On / April Fools Exploration ::: McD mini Hamburger & Cinnamon Fries

April Fool happens only onces a year...where you can actually play a joke on anyone or everyone making them believe it & at the end they receive a surprise "April Fools'" no one can actually be angry with you!!! Here is something interesting about April Fools' Day all around the world.

On a April Fool eve mood, I planned out Dear's surprise as his arrival back in KL that falls nicely on April Fools' Day, "Mc Donald's" Hamburger set meal. Didn't really went well as it was too last minute & Dear was actually craving for maggie mee rather then mcD. :(



My prank wasn't as real & funny as Dear's sister Su-Ann, where she actually asked around the house "anyone wanna buy anything. i'm going to South City Plaza." then she and Su-San headed out with her mom's car. Suddenly out of the blue, she called her mom telling her she is an accident, the guy banged her when she was reversing. With that Dear was sent out to check out and resolve the problem. Shortly after Dear went out she called her mom again! Since i was there observing without knowing it was a joke. Aunty's face was extremely serious and agitated. After a while i receive a Whatapps msg that it's a April Fools' joke that Su-Ann is playing on Aunty! That's when i know it's a joke. S-Ann called about 2-3 times with her mom explaining to her that Big Bro is on his way to help. To have her revenge on her mom, she actually wants her to come out immediately that Uncle (her daddy) need to come in the scene to bring Aunty out to get her. Boo!!! "April Fools'...." Su-Lynn & I can actually hear them laughing all the way in. **extreme prefect way of fooling a person**

Continue on this exploration of mine...

Let's start with the Hamburger. This involves no cooking nor baking... It is just creativity & having tons of fun making these adorable mini burgers which not only can be made for April Fools, it can also be made to serve as dessert for Parties or BBQ Gatherings. I have left some extremely important best suggestions for greater taste & better outlook beside the ingredients.





Ingredients Needed:
2 tablespoons of Shred Coconut
1/2 teaspoon of Green food Coloring
1 small transparent plastic bag
1 teaspoon of Warm Jam Spread
1/2 teaspoon of Sesame Seeds
Red Frosting **self made / ready bought from supermarkets**
Yellow Frosting **self made / ready bought from supermarkets**

These two ingredients need to match in size:::
2 packets of Mini Chipsmore Cookie **Best is Butter Cookies/Vanilla Waffle Cookies**
Mc Vitie's Mini Short Cakes with Milk Chocolate **Best is Round Mint Chocolate**

Step 1: Preparation for "lettuces". Place the Shred Coconut in the plastic bag and add the Green Food Coloring little by little after shaking them till even out!


Step 2: Preparation of the top bread. Take a Mini Cookie and spread it with the warm jam prepared. Sprinkle Sesame Seeds on top immediately so that it can stick.


Step 3: Assembling the Hamburger! Take a upside down Mini Cookie put a little Red Frosting as Tomato Sauce and also Yellow Frosting as Cheese!


Step 4: Place the Chocolate Petty on top.


Step 5: Press more little Red Frosting as Tomato Sauce and also Yellow Frosting as Cheese! Then sprinkle with "Vegetables" the Green Coconut Shred.



Steop 6: This time 2-3 drips of Red & Yellow Frosting only before you cover them with the "top bread". You're DONE!!!


Next is the Cinnamon "Fries".




Ingredients Needed:
Vegetable Oil to deep fry 1 inch deep of your pan
White Bread
1/2 cup of Sugar
2 tablespoons of Cinnamon Powder

Step 1: Heat 1 inch of vegetable oil to 365 degrees F in deep skillet.

Step 2: Mix Sugar and Cinnamon Powder on a plate.

Step 3: Cut white bread into sticks and fry until golden, about 1 minute.



Step 4: Drain on paper towels or rack, then roll in the cinnamon-sugar while still hot. Note: Beware of over dosage of cinnamon-sugar..


Step 5: can be serve with warm strawberry jelly as ketchup.

Packaging is as truthful & important. I dropped by McD to have my lunch there. emptying the French Fries and Nugget box and fill them with Mini Hamburgers and Cinnamon Stick. Of course not to forget that McD drink makes a set & kept my drink fresh and un-drank. Arranged and packed nicely in a McD paper bag!



There you go... Professionally Real enough to Prank your family or friends or colleagues! hehe~
